It is also tasty with just carbonated water, but I really like the ginger flavor!&lt;br /&gt;&lt;br /&gt;Mint Julep&lt;br /&gt;&lt;br /&gt;1 c. water&lt;br /&gt;1/2 c. sugar&lt;br /&gt;Zest and juice from 2 lemons&lt;br /&gt;1 c. fresh mint leaves, washed and chopped fine&lt;br /&gt;Ginger Ale &lt;br /&gt;&lt;br /&gt;Boil water, sugar, and lemon zest for 5 minutes. Remove from heat and stir in juice. Bruise mint leaves and add to mixture, stirring. Let stand for a few hours; then strain into a jar with lid. Refrigerate until serving. (May store 2 to 3 weeks.)&lt;br /&gt;&lt;br /&gt;When making the julep, pour ginger ale into glasses and add syrup to taste (2 to 4 tablespoons per serving). Garnish with mint leaves and/or fresh raspberries. Serves 10 to 15. I decided to brown the whole 2.5 pounds at once to cut down on cooking time.  So, today, I had 1.5 pounds of cooked hamburger and no clue what to do with it.  Shockingly, the family loved it so much, seconds and in some cases thirds were had by all.  It's quick, it's easy, it's cheap.  YAY!  I made a ton, and Brad will be taking it lunch for a couple of days.  :o)  Feel free to half it.&lt;br /&gt;&lt;br /&gt;I cooked 3 cups of rice.  While it was cooking I put the browned hamburger into a sauce pan with 2 cans of cream of mushroom, 1 cup of milk, and 1.5 cups of frozen corn.  Once the rice is done and the sauce is hot, just put it on top of the rice.  Salt and pepper to taste. But a 6 pack costs $5.00. Now I make my own.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;I buy a big bottle of real lemon juice.&lt;br /&gt;&lt;br /&gt;First I put lemon juice in a cup, I like mine tart, so about 1/4 c.  Then I add a packet of sweetner and swirl it around to dissolve the sweetner.  Then I add seltzer water to taste. I got it at Target and it was wonderful!&lt;br /&gt;&lt;br /&gt;Servings: 4&lt;br /&gt;&lt;br /&gt;1/4 cup extra virgin olive oil&lt;br /&gt;1 small Vidalia onion, chopped&lt;br /&gt;1 red bell pepper, sliced (julienned)&lt;br /&gt;1/2 zucchini, sliced (julienned)&lt;br /&gt;Salt to taste&lt;br /&gt;4 chicken breasts, sliced in 1/2-inch strips&lt;br /&gt;2 small branches rosemary&lt;br /&gt;1 garlic clove, minced&lt;br /&gt;Juice of 1/2 lemon&lt;br /&gt;&lt;br /&gt;Veronese Sauce:&lt;br /&gt;1 cup Parmesan cheese, grated&lt;br /&gt;1/2 cup ricotta cheese&lt;br /&gt;14 fluid ounces heavy cream&lt;br /&gt;&lt;br /&gt;Gnocchi:&lt;br /&gt;2 quarts water&lt;br /&gt;6 ounces all-purpose flour&lt;br /&gt;2 eggs&lt;br /&gt;2 pounds russet potatoes&lt;br /&gt;2 teaspoons salt&lt;br /&gt;OR&lt;br /&gt;1 pound gnocchi (potato dumplings, cooked&lt;br /&gt;according to package directions&lt;br /&gt;&lt;br /&gt;Gnocchi: Wash potatoes and place in water. Cook potatoes until soft (cook time will depend on size of potatoes). Remove potatoes from water and cool in refrigerator.&lt;br /&gt;&lt;br /&gt;Peel cooled potatoes and push them through a fine grater (rice grater) until mashed; do not over-mash potatoes or they will get tough.&lt;br /&gt;&lt;br /&gt;Combine potatoes, flour and eggs in a mixing bowl. Mix well until dough does not stick to hands (add small amounts of flour at a time if needed).&lt;br /&gt;&lt;br /&gt;Divide dough into 4 sections. Roll out each section into a long rope. Cut each rope into 1/2-inch pieces. Push fork tines on each piece for the classic gnocchi appearance.&lt;br /&gt;&lt;br /&gt;Bring water to a boil in a sauce pot. Drop in gnocchi and cook until they float.&lt;br /&gt;&lt;br /&gt;Chicken and Sauce: Combine garlic, lemon juice, rosemary and chicken slices in a mixing bowl. Let marinate for at least 2 hours.&lt;br /&gt;&lt;br /&gt;Combine Parmesan cheese, ricotta cheese and heavy cream in a mixing bowl and set aside.&lt;br /&gt;&lt;br /&gt;Heat saute pan on medium high. Add extra virgin olive oil, onions, bell peppers and zucchini. Saute until onions are translucent (do not brown).&lt;br /&gt;&lt;br /&gt;Add marinated chicken slices and cook until slices are brown on all sides and internal temperature is 165 degrees F. Reduce heat and add sauce mixture. Bring to a simmer.&lt;br /&gt;&lt;br /&gt;Drain cooked gnocchi and add to pan with chicken, vegetables and sauce. Way too yummy and way too easy.&lt;br /&gt;&lt;br /&gt;I don't have a recipe I'm using, so I'll just share some basic ideas.&lt;br /&gt;&lt;br /&gt;4 &lt;span id="SPELLING_ERROR_0" class="blsp-spelling-error"&gt;roma&lt;/span&gt; tomatoes with the seeds out&lt;br /&gt;cilantro - I used quite a bit because I love it&lt;br /&gt;3 cloves garlic&lt;br /&gt;2 jalapenos with the seeds removed&lt;br /&gt;garlic salt - start with 1 tsp&lt;br /&gt;squeeze in lemon juice and lime juice&lt;br /&gt;I dumped in some frozen chopped onion because I hate cutting up onion&lt;br /&gt;&lt;br /&gt;Then I just put it in my chopper.  5 minutes tops. I was waiting for her to put it on here, but she just had a baby, so it could be awhile. ;o)&lt;br /&gt;&lt;br /&gt;Bread Machine Dinner Rolls&lt;br /&gt;1 cup water&lt;br /&gt;2 T. butter (softened)&lt;br /&gt;1 egg&lt;br /&gt;1/4 cup sugar&lt;br /&gt;1 tsp. salt&lt;br /&gt;1 T yeast, active&lt;br /&gt;3 1/4 cup flour, white or wheat or a mix of both (whatever you wish)&lt;br /&gt;&lt;br /&gt;Place ingredients in order into the bread machine. Set on dough setting and start. After cycle is complete (just the mixing cycle, not rising cycle), remove from machine. With buttered hands, shape dough into balls (about the size of a golf ball, but a little larger). Place into a buttered 9x13 pan. Here's a great one!&lt;br /&gt;&lt;br /&gt;What you need:&lt;br /&gt;-1 tbsp olive oil&lt;br /&gt;-1/2 onion or small onion&lt;br /&gt;-3 cloves garlic&lt;br /&gt;-Salt/pepper to taste&lt;br /&gt;-chicken bullion (4 cubes)&lt;br /&gt;-4 c water&lt;br /&gt;-1 c cooked/cubed ham&lt;br /&gt;-1 c. frozen peas&lt;br /&gt;-1 tbsp cornstarch&lt;br /&gt;3/4 c cheddar cheese (I used pre-shredded)&lt;br /&gt;-1/4 c milk&lt;br /&gt;&lt;br /&gt;What to do:&lt;br /&gt;Put olive oil in skillet and heat up on med.  Add diced onion and garlic and cook till soft.  Add 4 cups of water and chicken bullion.  Stir occassionally.  Add the peas and ham.  cook some more for about 15 minutes.  Taste and add pepper and salt.  Wisk in cornstarch and bring to boil.  Turn down to simmer and add cheddar cheese a handful at a time, stirring it until melted before adding more. Sorry about that.  But I just had to share this amazing recipe with &lt;span id="SPELLING_ERROR_0" class="blsp-spelling-error"&gt;ya'll&lt;/span&gt;.  I made a double batch last night, hoping to freeze some, but I doubt there will even be enough left for leftovers tomorrow.&lt;br /&gt;&lt;br /&gt;I got it from my friend Linda Pope.  Enjoy!!!&lt;br /&gt;&lt;br /&gt;1 lb ground beef&lt;br /&gt;1 onion, chopped&lt;br /&gt;1 c.each carrots and celery, chopped&lt;br /&gt;2 c. potatoes, chopped&lt;br /&gt;2 c. water with 1 beef bouillon cube&lt;br /&gt;1 qt tomato juice&lt;br /&gt;salt and pepper&lt;br /&gt;&lt;br /&gt;Brown beef and onion.  Put in a pot along with carrots, celery, potatoes, water and bouillon.  Simmer until tender.  Add tomato juice, salt and pepper to taste.&lt;br /&gt;&lt;br /&gt;Easy, right?  And &lt;span id="SPELLING_ERROR_1" class="blsp-spelling-error"&gt;soooo&lt;/span&gt; yummy. (I use almost two blocks)&lt;br /&gt;&lt;br /&gt;Top with container of caramel apple dip. I got this one from &lt;a href="http://www.mycharmingkids.net/2009/05/recipe-for-hummus.html"&gt;&lt;span id="SPELLING_ERROR_1" class="blsp-spelling-error"&gt;MckMama&lt;/span&gt;&lt;/a&gt;. It is cut and paste from her post word for word, so go check out her blog for more details.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Hummus&lt;br /&gt;&lt;br /&gt;1 16 oz can of chickpeas (also known as garbanzo beans)&lt;br /&gt;&lt;br /&gt;the liquid from said can of chickpeas&lt;br /&gt;&lt;br /&gt;4 tablespoons lemon juice (or lime if you want to get crazy)&lt;br /&gt;&lt;br /&gt;1 1/2 tablespoons &lt;span id="SPELLING_ERROR_2" class="blsp-spelling-error"&gt;tahini&lt;/span&gt; (sesame seed paste: unless you're really crafty, you'll probably just want to buy rather than make this)&lt;br /&gt;&lt;br /&gt;2 crushed garlic cloves&lt;br /&gt;&lt;br /&gt;1/2 teaspoon sea salt&lt;br /&gt;&lt;br /&gt;2 tablespoons olive oil&lt;br /&gt;&lt;br /&gt;Dump all of the ingredients into your blender. Add the chicken (if you use raw, then cook it through). Add the green chiles, chicken broth, corn, and bring to a simmer. Stir in the cream cheese cubes until melted. Stir in the rice and season to taste. Love that thing!)&lt;br /&gt;Salt, pepper, and chicken bouillon to taste&lt;br /&gt;8-9 cups of water&lt;br /&gt;&lt;br /&gt;Wash peas in hot water and add all ingredients to the crockpot. The original recipe I splurged on called for 1 bag of peas and 6 cups of water, but 8-9 cups is all my big crockpot would hold - I ended up with a thick soup, which is how I like it anyway. You could always halve the recipe and use less water.&lt;br /&gt;&lt;br /&gt;Cook on high for about 4 hours (I started stirring it after 3 hours to help peas mush up) until peas are mushy. Serve with cornbread. But I love it. A lot. It is fabulous with a baguette. We usually have it with steak and asparagus because they also taste good in the fondue. :o)&lt;br /&gt;&lt;br /&gt;Cheddar Cheese Fondue&lt;br /&gt;4 Servings&lt;br /&gt;&lt;br /&gt;2 Tbs butter or &lt;span id="SPELLING_ERROR_0" class="blsp-spelling-corrected"&gt;margarine&lt;/span&gt;&lt;br /&gt;3 Tbs flour&lt;br /&gt;2 cups milk&lt;br /&gt;salt&lt;br /&gt;paprika&lt;br /&gt;nutmeg&lt;br /&gt;1 lb. ripe WHITE cheddar cheese, finely diced&lt;br /&gt;&lt;br /&gt;Melt butter/&lt;span id="SPELLING_ERROR_1" class="blsp-spelling-corrected"&gt;margarine&lt;/span&gt; in fondue pot. I think I will make it our new traditional birthday breakfast treat.  Yum-my. &lt;br /&gt;&lt;br /&gt;1 pkg frozen rolls (about 20-24)&lt;br /&gt;1 small pkg butterscotch pudding (non-instant)&lt;br /&gt;1 c nuts, chopped&lt;br /&gt;1 c brown sugar&lt;br /&gt;3/4 tsp cinnamon&lt;br /&gt;6 T butter, melted&lt;br /&gt;&lt;br /&gt;Put chopped nuts in bottom of a large greased &lt;span id="SPELLING_ERROR_0" class="blsp-spelling-corrected"&gt;bunt&lt;/span&gt; pan.  Put frozen rolls on top of nuts.  Mix pudding, &lt;span id="SPELLING_ERROR_1" class="blsp-spelling-corrected"&gt;cinnamon&lt;/span&gt;, and brown sugar and sprinkle on top of rolls.  Drizzle butter over all.  Cover with towel and leave overnight.  Bake in the morning at 350 for 30-40 minutes, covering with foil after 20).  Release immediately from pan.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;A few thoughts of mine:  1) I used some rolls that I made and froze and it still worked great.  I also used instant vanilla pudding because I didn't have any other on hand and it still was yummy, though the butterscotch might give it a more caramel taste.  Also, I forgot to tip the pan over immediately and it pretty much stuck in the pan.  Be sure to get them out quick!&lt;br /&gt;&lt;br /&gt;Super yummy, super fast, and do easy to just pop in the oven in the morning. I would have loved some green chili. But alas, I can't make that. Here are some yummy recipes for some good NM food!&lt;br /&gt;&lt;br /&gt;This is from this website. It also has a link for some tools to make the tortillas. Bonus! http://www.texasrollingpins.com/tortillarecipeprint.html&lt;br /&gt;&lt;br /&gt;Flour Tortilla Recipe&lt;br /&gt;Ingredients:&lt;br /&gt;3 cups unbleached flour&lt;br /&gt;2 tsp. baking powder&lt;br /&gt;1 tsp. salt&lt;br /&gt;4-6 Tbsp. vegetable shortening or lard&lt;br /&gt;about 1 1/4 cups warm water&lt;br /&gt;&lt;br /&gt;Instructions:&lt;br /&gt;Mix dry ingredients in a large bowl.&lt;br /&gt;&lt;br /&gt;Add vegetable shortening or lard. Or use a combination of half lard, half shortening.&lt;br /&gt;Use a fork or a pastry cutter to cut in the shortening or just do it the old fashioned&lt;br /&gt;way and use your hands.&lt;br /&gt;&lt;br /&gt;Next add warm water a little at a time until your dough is soft and not sticky. You do&lt;br /&gt;not need very hot water.&lt;br /&gt;&lt;br /&gt;Knead the dough for a few minutes.&lt;br /&gt;&lt;br /&gt;Now you will pull off pieces of dough to form about 12 small dough balls. Let them&lt;br /&gt;rest for at least 10 minutes, longer if you like.&lt;br /&gt;&lt;br /&gt;This is a good time to heat up the &lt;span id="SPELLING_ERROR_0" class="blsp-spelling-error"&gt;comal&lt;/span&gt;. You will want to set it at medium to high&lt;br /&gt;heat. If it is too hot the tortillas will cook too fast.&lt;br /&gt;&lt;br /&gt;Now you can roll out the dough with your tortilla rolling pin or &lt;span id="SPELLING_ERROR_1" class="blsp-spelling-error"&gt;palote&lt;/span&gt;. It is a good&lt;br /&gt;idea to dust each ball with a little flour just before you roll them out. Lay the &lt;span id="SPELLING_ERROR_2" class="blsp-spelling-error"&gt;palote&lt;/span&gt;&lt;br /&gt;in the center of the dough ball and roll up, center and roll down. It is good to lift the&lt;br /&gt;dough and turn it. Again, rolling pin in the center and roll. Roll them out fairly thin.&lt;br /&gt;&lt;br /&gt;Lay your tortilla on the hot &lt;span id="SPELLING_ERROR_3" class="blsp-spelling-error"&gt;comal&lt;/span&gt;. It takes just a few seconds to cook. Flip to the other&lt;br /&gt;side. When they are done it should have lots of nice brown speckles. Place them in a&lt;br /&gt;towel. If you would like you can use a tortilla warmer to keep them warm longer.&lt;br /&gt;They are ready to be served!&lt;br /&gt;&lt;br /&gt;If you need any of the equipment to make flour tortillas, try our authentic tortilla kit.&lt;br /&gt;&lt;br /&gt;It is well worth the effort to make homemade tortillas! It is by Ida Peabody)&lt;br /&gt;&lt;br /&gt;6 c flour&lt;br /&gt;2 1/2 tsp salt&lt;br /&gt;2 tsp baking powder&lt;br /&gt;1/2 c canola oil&lt;br /&gt;1 pkg dry yeast&lt;br /&gt;2 tbsp sugar&lt;br /&gt;1 c warm water&lt;br /&gt;&lt;br /&gt;Stir sugar into warm water. Add yeast and let stand until it bubbles. Add salt and baking powder to flour. Make a well in the flour mixture. Add oil and yeast mixture. Add enough warm water to make firm dough. Let rise for 30 minutes or more. Shape dough into balls. Roll and cut into any shape you like. Deep fry in hot canola oil. Drain on paper towels. Eat with powdered sugar or honey. Bring to boiling, reduce heat. Cover and simmer 20-25 minutes until veggies and lentils are tender. Stir in sausage and heat through.&lt;br /&gt;&lt;br /&gt;Makes about 7 cups (5 main dish servings)&lt;br /&gt;&lt;br /&gt;267 calories per serving, 11 g total fat&lt;br /&gt;&lt;br /&gt;My thoughts: I prefer using ground sausage. I just brown it after I get the soup going and then add it when it is browned for the remainder of the time. It just seems to go farther since the pieces are smaller. I'd rather get a lot of bites with a little sausage than a few with a lot of sausage. And some ground sausage varieties have great seasoning too. I don't put in the pepper because my boys don't like spice, but I put red pepper flakes in my own bowl. And if you really want the flavor to pop, don't be afraid to add a tiny bit of salt and lots of pepper. :)&lt;br /&gt;&lt;br /&gt;It can be frozen, but it cooks pretty fast from scratch too. We just did a lattice top instead of a crumb topping. I wonder if it is freezable....&lt;br /&gt;&lt;br /&gt;***Update***  We followed the recipe this time and it was &lt;span id="SPELLING_ERROR_0" class="blsp-spelling-error"&gt;sooooo&lt;/span&gt; good.  Forget the lattice and just follow the directions.  :o)&lt;br /&gt;&lt;br /&gt;1 (9 inch) pie crust, unbaked&lt;br /&gt;4 c. fresh or 16 oz. frozen blackberries&lt;br /&gt;1 c. sugar&lt;br /&gt;1 c. sour cream&lt;br /&gt;3 tbsp. flour&lt;br /&gt;1/4 tsp. salt&lt;br /&gt;&lt;br /&gt;TOPPING:&lt;br /&gt;&lt;br /&gt;1/4 c. bread crumbs&lt;br /&gt;2 tbsp. sugar&lt;br /&gt;1 tbsp. melted butter&lt;br /&gt;&lt;br /&gt;Put blackberries in pie crust. Cream together next 4 ingredients and pour over blackberries. Combine topping ingredients and sprinkle over pie. Bake at 375 degrees for 40 to 45 minutes. I made it for Darrica last week, so she can tell you if it's any good. ;o) I grew up eating it and it was a family fave. There are two versions - chicken or beef (ground or shredded).&lt;br /&gt;&lt;br /&gt;I usually cook without measuring, so bear with me! lol...&lt;br /&gt;&lt;br /&gt;You will need:&lt;br /&gt;Tortilla chips (I use the white corn - doesn't matter - leftover, stale, it's all good)&lt;br /&gt;cooked shredded or cubed chicken - leftover is fine - about 1 1/2 cups (substitute beef if you want to!)&lt;br /&gt;1 can cream of chicken soup (or cream of mushroom for the beef version)&lt;br /&gt;1 can drained rotel tomatoes (if you don't want the spicy kick, use regular diced canned tomatoes)&lt;br /&gt;1 small bag&amp;nbsp;(approx 8 oz)&amp;nbsp;frozen mixed vegatables - pop 'em in the microwave to thaw. Yes, you can use fresh if you've got the time, but I would steam them first since it doesn't cook long. Any veggies are ok but I like the carrots, peas, and corn mix.&lt;br /&gt;Shredded cheese&lt;br /&gt;Salt, pepper, and garlic powder to taste.&lt;br /&gt;&lt;br /&gt;Crush tortilla chips into the bottom of a 9x13 inch pan. Crush enough to cover the bottom. &lt;br /&gt;&lt;br /&gt;In a bowl, mix chicken, cream soup, drained tomatoes, steamed veggies, and 1/2 cup of cheese. Add salt, pepper, and garlic to taste.&amp;nbsp;Spoon over chips.&lt;br /&gt;&lt;br /&gt;Cover with more shredded cheese and more crushed tortilla chips. &lt;br /&gt;&lt;br /&gt;Bake at 350 for 25-30 minutes.&lt;br /&gt;&lt;br /&gt;Freezer alert: If you want to freeze it do so before adding the final layer of tortilla chips on top. You can do it when you are ready to bake it. Place uncooked chicken in shallow buttered casserole dish. Layer cheese on top. Mix soup, wine, salt, pepper; pour over cheese. Sprinkle stuffing mix on top and drizzle with melted butter. Bake uncovered for 1 hour.&lt;br /&gt;****&lt;br /&gt;&lt;br /&gt;Her recipe calls for either Mozzarella or Swiss cheese, so I used Mozzarella knowing that my kiddos would eat what I didn't use for the recipe (Swiss is too smelly for them-LOL). I also substituted the white cooking wine with chicken broth. And with the next batch, I will add a bit more than 1 cup of crushed stuffing mix (I *heart* stuffing) just to bulk up the 'gravy'.&lt;br /&gt;&lt;br /&gt;IT WAS DELICIOUS! BOTH of my currently very picky eaters &lt;em&gt;gladly&lt;/em&gt; ate ALL of it (this is &lt;em&gt;huge&lt;/em&gt;). Add salt, olive oil and 2 1/2 cups flour.  Attach bowl and dough hook to mixer.  Turn to speed 2 and mix about 1 minute.&lt;br /&gt;&lt;br /&gt;Continuing on speed 2, add remaining flour, 1/2 cup at a time, and mix about 2 minutes or until dough clings to hook and cleans the side of the bowl.  Kneed on speed 2 about 2 minutes longer (I don't add any more flour, unless it's absolutely necessary).&lt;br /&gt;&lt;br /&gt;Place dough in a greased bowl, turning to grease the top.  Let rise in warm place, free from draft (I turn my oven on as low as it will go--250--for a couple of minutes, turn it off, and place my dough inside the warm oven, uncovered) for about an hour or until doubled in bulk.  Punch dough down.&lt;br /&gt;&lt;br /&gt;Spread dough onto greased pan.  Add toppings as desired. And we actually had plenty for leftovers as well! &lt;br /&gt;&lt;br /&gt;box of jumbo pasta shells&lt;br /&gt;1 lb ground beef (although I could have probably used a bit more)&lt;br /&gt;package cream cheese with chives, softened&lt;br /&gt;teaspoon of chili powder&lt;br /&gt;tablespoon melted butter&lt;br /&gt;cup taco sauce (I just poured the whole bottle.)&lt;br /&gt;shredded cheddar&lt;br /&gt;shredded monterey jack (I think I just used one kind.)&lt;br /&gt;crushed tortilla chips&lt;br /&gt;sour cream&lt;br /&gt;&lt;br /&gt;1. Preheat oven to 350.&lt;br /&gt;&lt;br /&gt;2. Cook pasta shells, rinse and drain.&lt;br /&gt;&lt;br /&gt;3. Brown ground beef, drain.&lt;br /&gt;&lt;br /&gt;4. Reduce heat to medium, add cream cheese and chili powder - let simmer for  5 mins.&lt;br /&gt;&lt;br /&gt;5.  Toss shells with melted butter, then fill with beef mixture&lt;br /&gt;&lt;br /&gt;6.  Arrange filled shells in a 13x9 pan. Pour Taco sauce over and cover with foil .&lt;br /&gt;&lt;br /&gt;7. Bake for 15 mins.&lt;br /&gt;&lt;br /&gt;8.  Uncover, top with cheese and crushed chips and bake for another 15 mins.&lt;br /&gt;&lt;br /&gt;9. I had never had Edamame, so I thought we would try it.  &lt;/p&gt;  &lt;p&gt;The food itself is extremely healthy and if you buy the frozen type in the pod, you only have to defrost it to eat it.  This makes it a super easy and simple snack or side for any meal.&lt;/p&gt;  &lt;p&gt;Tonight, I reintroduced Edamame to my boys.  Bert liked it last time we had it, so I reminded him of this and showed him how to pop open the pod to expose the seed.  In my opinion, Edamame have a nutty flavor, and Bert likes nuts…So, I made sure to remind him that they taste like nuts. Please excuse my “shirtless” boys at the dinner table.  I didn’t notice until they had already gotten dinner underway.  &lt;/p&gt;  &lt;p&gt;Ernie is not a fan of anything un-fruit-like.  He still had fun learning how to open the Edamame.  The green soybeans never once crossed his lips. So, apparently Edamame doubles as a wonderful math manipulative.  &lt;/p&gt;  &lt;p&gt;In this household, 50% is passing when it comes to food.  If I can get one kid to like it and eat it, I have succeeded! Without knowing what it should taste like, I created this.&lt;/p&gt;  &lt;p&gt;Ingredients:&lt;/p&gt;  &lt;h2&gt;2 cups Cooked chickpeas (garbanzo beans)&lt;/h2&gt;  &lt;h2&gt;2-3 tbsp. miracle whip&lt;/h2&gt;  &lt;h2&gt;Juice of 1 lemon&lt;/h2&gt;  &lt;h2&gt;6-10 basil leaves, chopped&lt;/h2&gt;  &lt;h2&gt;1-2 tbsp. salsa (I used the salsa I prepared here)&lt;/h2&gt;  &lt;h2&gt;Salt &amp;amp; Pepper to taste&lt;/h2&gt;  &lt;p&gt;Directions:&lt;/p&gt;  &lt;h2&gt;Mix all ingredients in food processor and process until smooth.&lt;/h2&gt;  &lt;p&gt;I have been eating this with Fritos and as a condiment on my turkey sandwich instead of mayo.&amp;#160;  &lt;h2&gt;4 jalapenos with seeds minced&lt;/h2&gt;  &lt;h2&gt;fresh cilantro (handful chopped)&lt;/h2&gt;  &lt;h2&gt;blender&lt;/h2&gt;  &lt;p&gt;Instructions:&lt;/p&gt;  &lt;p&gt;Heat olive oil in stock pot.&amp;#160; Add onion, garlic, jalapeno, and tomatoes.&amp;#160; Cook down for about 5-8 minutes.&amp;#160; Add cilantro.&amp;#160; Put into blender and blend down until it is the consistency you want.&amp;#160; It turned out pretty good!&lt;/p&gt;  &lt;p&gt;&amp;#160;&lt;/p&gt;  &lt;p&gt;Here is what you need:&lt;/p&gt;  &lt;h1&gt;&lt;/h1&gt;  &lt;ul&gt;   &lt;li&gt;2 Tbsp butter&lt;/li&gt;    &lt;li&gt;2 Tbsp Flour&lt;/li&gt;    &lt;li&gt;3 cloves garlic&lt;/li&gt;    &lt;li&gt;2-3 Jalapenos (no seeds—I used 4 with no seeds and it was a little spicy)&lt;/li&gt;    &lt;li&gt;2 cups chicken broth&lt;/li&gt;    &lt;li&gt;1/2 cup milk&lt;/li&gt;    &lt;li&gt;1 1/2 cup smoked gouda cheese (this could really be altered either by increasing/decreasing amount or using another cheese—I like the smoky flavor that smoked gouda provides.)&lt;/li&gt;    &lt;li&gt;1 cup bacon bits (you could alter the amount here too—I had some leftover from making extra bacon bits a week ago)&lt;/li&gt;    &lt;li&gt;1 cup cooked chicken cubed (optional-I was cleaning out my fridge leftovers)&lt;/li&gt;    &lt;li&gt;4 baking potatoes (sliced thinly)&lt;/li&gt;    &lt;li&gt;salt and pepper to taste&lt;/li&gt;    &lt;li&gt;cheddar cheese (optional)&lt;/li&gt; &lt;/ul&gt;  &lt;p&gt;&amp;#160;&lt;/p&gt;  &lt;p&gt;Here are the instructions:&lt;/p&gt;  &lt;ol&gt;   &lt;li&gt;Melt butter in pan on medium heat.&amp;#160; Add garlic and flour and make a paste.&amp;#160; Add broth and wisk well until all lumps are gone.&amp;#160; Add gouda cheese, jalapeno, bacon, salt and pepper.&amp;#160; Let cook for about 5-10 minutes. I need help!!!!&lt;div class="blogger-post-footer"&gt;&lt;img width='1' height='1' src='https://blogger.googleusercontent.com/tracker/7038028394829661488-5899317737460600458?l=helpingthemedicinegodown.blogspot.com' alt='' /&gt;&lt;/div&gt;</content><link rel='replies' type='application/atom+xml' href='http://helpingthemedicinegodown.blogspot.com/feeds/5899317737460600458/comments/default' title='Post Comments'/><link rel='replies' type='text/html' href='http://www.blogger.com/comment.g?blogID=7038028394829661488&amp;postID=5899317737460600458&amp;isPopup=true' title='4 Comments'/><link rel='edit' type='application/atom+xml' href='http://www.blogger.com/feeds/7038028394829661488/posts/default/5899317737460600458'/><link rel='self' type='application/atom+xml' href='http://www.blogger.com/feeds/7038028394829661488/posts/default/5899317737460600458'/><link rel='alternate' type='text/html' href='http://helpingthemedicinegodown.blogspot.com/2009/06/sos.html' title='SOS!'/><author><name>Melisa</name><uri>http://www.blogger.com/profile/06853815094926344439</uri><email>noreply@blogger.com</email><gd:image rel='http://schemas.google.com/g/2005#thumbnail' width='32' height='27' src='http://2.bp.blogspot.com/_ACZEm6EoDQo/SYJ3oxEit3I/AAAAAAAAA7A/l0J6yqQ-4Pw/S220/mm.jpg'/></author><thr:total>4</thr:total></entry><entry><id>tag:blogger.com,1999:blog-7038028394829661488.post-1606910920993359649</id><published>2009-06-05T16:14:00.001-04:00</published><updated>2009-06-05T16:14:58.622-04:00</updated><category scheme='http://www.blogger.com/atom/ns#' term='inexpensive'/><category scheme='http://www.blogger.com/atom/ns#' term='quick and easy'/><category scheme='http://www.blogger.com/atom/ns#' term='pork'/><title type='text'>Pan Fried Pork Chops with Mushroom Gravy and Oven Potatoes</title><content type='html'>&lt;p&gt;I made this the other night and scored an 8 out of 10 from the husband.&amp;#160; This score is almost unheard of sense it seems only Emeril himself could get a 10.&amp;#160; (yeah, I have never seen a 9 either)&amp;#160; I think this is a testament to his pickiness, but I am sure you will hear more of that as I post more recipes.&amp;#160; ;)&lt;/p&gt;  &lt;p&gt;You will need:&lt;/p&gt;  &lt;p&gt;For the Pork Chops&lt;/p&gt;  &lt;h2&gt;2 Pork Chops (prefer bone-in)&lt;/h2&gt;  &lt;h2&gt;a couple tablespoons olive oil&lt;/h2&gt;  &lt;h2&gt;McCormick Grill Mates Montreal Steak Seasoning&lt;/h2&gt;  &lt;h2&gt;Salt&lt;/h2&gt;  &lt;h2&gt;Pepper&lt;/h2&gt;  &lt;h2&gt;2 tbsp flour&lt;/h2&gt;  &lt;h2&gt;2 tbsp butter (I used reduced calorie sticks)&lt;/h2&gt;  &lt;h2&gt;1 cup beef broth (you could use chicken or pork)&lt;/h2&gt;  &lt;h2&gt;fresh mushrooms sliced&lt;/h2&gt;  &lt;p&gt;For the Potatoes&lt;/p&gt;  &lt;h2&gt;3 Potatoes &lt;/h2&gt;  &lt;h2&gt;1/4 package Lipton Onion Soup Mix&lt;/h2&gt;  &lt;h2&gt;A couple tablespoons of olive oil&lt;/h2&gt;  &lt;h2&gt;Salt&lt;/h2&gt;  &lt;h2&gt;Pepper&lt;/h2&gt;  &lt;p&gt;Cooking instructions:&lt;/p&gt;  &lt;p&gt;Preheat oven to 375 degrees.&amp;#160; Line a square casserole dish with foil (for easy cleanup).&amp;#160; Peel and chop potatoes into bite size pieces.&amp;#160; Put into dish.&amp;#160; Add a couple tbsp. olive oil, salt, pepper, and 1/4 package of Lipton Onion Soup Mix.&amp;#160; Mix to coat.&amp;#160; Bake until potatoes are fork tender.&amp;#160; (you could leave the skin on too)&lt;/p&gt;  &lt;p&gt;Heat a skillet to Med-High and add a couple tablespoons olive oil.&amp;#160; Season pork chops with McCormick seasoning, salt and pepper.&amp;#160; Put seasoned side down in hot oil.&amp;#160; Season other side of pork chops.&amp;#160; Cook till browned and turn.&amp;#160; Cook for another couple minutes until pink is gone and second side is browned.&amp;#160; Take pork chops out of skillet and let them rest on a plate.&amp;#160; Turn heat down to Medium.&amp;#160; Add butter and flour.&amp;#160; Mix to make a thick paste.&amp;#160; Wisk in broth until the flour/butter mixture is completely blended and lump-free.&amp;#160; Really scrape the bottom of the pan and get all the bits and pieces from cooking the pork chops—it adds lots of flavor.&amp;#160; Add chopped mushrooms.&amp;#160; Turn down gravy to Low heat and let simmer with a lid on it.&amp;#160; After about 10 minutes, return the pork chops and let them simmer for another 5 minutes before serving. Serve with tortilla chips or chicken. Makes about 2 cups.&lt;br /&gt;&lt;br /&gt;This is so good. I made it last night for the first time. I put it on top or our chicken and then sprinkled the chicken with some 2% Mexican cheese blend. Bake for 40 to 45 minutes, or until center is set and top is light golden brown. Work in butter with fingers.&lt;br /&gt;&lt;br /&gt;Combine wet ingredients and mix into dry just until moistened. Add cherries. Mixture will be very sticky. Turn onto floured surface and knead 5 times with floured hands. Pat out to ½ inch thick and cut into triangles or circles.&lt;br /&gt;&lt;br /&gt;Brush tops with egg wash. Brown ground beef with taco seasoning. Drain fat. Spread beans along bottom of a 9x13 casserole dish. Layer ground beef and then cheese. Pour corn bread batter over the top. Bake at 425 for about 10 to 15 min. until cornbread is done. I got the base recipe from Kraft Food and Family magazine, but I have changed it up a bit.&lt;br /&gt;&lt;br /&gt;1 can Pinto Beans, drained&lt;br /&gt;1 can Black Beans, drained&lt;br /&gt;1 can Red Kidney Beans, drained&lt;br /&gt;1 can Sweet Corn, drained&lt;br /&gt;1 16oz jar salsa (mild or medium depending on your taste)&lt;br /&gt;2 cans Diced Tomatoes, undrained&lt;br /&gt;16 oz Lean Ground Turkey&lt;br /&gt;1 tsp Cumin (or to taste)&lt;br /&gt;1 tsp Chili Powder (or to taste)&lt;br /&gt;&lt;br /&gt;Super easy...cook the ground turkey separately and then dump in everything else with the turkey and let it simmer. You'll need a very large pot. This could serve an army. It is ready when it is to the temperature of your liking! We top it with 2% cheese and light sour cream. Kody throws on guacamole sometimes as well. It is super yummy and easy. No mixing bowls required! I only dream of having these kinds of recipes.  :o)&lt;br /&gt;&lt;br /&gt;********&lt;br /&gt;So, unfortunately, because there are 1,000 spices we use in Indian cooking, I would have a tendency to just mix everything together…and everything would taste the same. So, my cheat sheet recipe book is called &lt;a href="http://www.amazon.com/Complete-Indian-Cooking-Sterling-Publishing/dp/0600599477/ref=sr_1_1?ie=UTF8&amp;amp;s=books&amp;amp;qid=1238332458&amp;amp;sr=1-1"&gt;Complete Indian Cooking&lt;/a&gt;.” (&lt;em&gt;On Amazon, there are used versions of the book for $6!&lt;/em&gt;)&lt;br /&gt;&lt;br /&gt;This book &lt;strong&gt;&lt;u&gt;totally&lt;/u&gt;&lt;/strong&gt; gets my Indian approval if you are looking for an Indian cookbook. It has vegetarian dishes, lamb dishes, desserts, appetizers...and very large, colorful pictures of the food. Okay, moving on…:o)&lt;br /&gt;&lt;br /&gt;&lt;u&gt;Ingredients for Chicken Makhani&lt;/u&gt;&lt;br /&gt;1.5 lbs boneless, skinless chicken breasts (cut into 2 inch pieces)&lt;br /&gt;Vegetable oil&lt;br /&gt;&lt;br /&gt;&lt;u&gt;Marinade&lt;/u&gt;&lt;br /&gt;3 large red chilies, seeded and chopped&lt;br /&gt;4 garlic cloves (I use garlic paste)&lt;br /&gt;2 teaspoons cumin seeds crushed&lt;br /&gt;1 teaspoon garam masala&lt;br /&gt;0.5 teaspoon salt&lt;br /&gt;2 tablespoons fresh cilantro&lt;br /&gt;4 tablespoons lemon juice (fresh is always best)&lt;br /&gt;.75 cup plain yogurt&lt;br /&gt;(Note--I've been able to find all of these spices at regular grocery stores, by the way. :-D)&lt;br /&gt;&lt;br /&gt;&lt;u&gt;Sauce&lt;/u&gt;&lt;br /&gt;3 lbs ripe tomatoes, quartered&lt;br /&gt;4 tablespoons butter&lt;br /&gt;1 cup heavy whipping cream&lt;br /&gt;Salt&lt;br /&gt;&lt;br /&gt;Marinade - Place the ingredients in a food processor (I use a blender) briefly to produce a paste. Transfer the marinade into a nonmetallic bowl with the chicken. Cover and refrigerate for 3 hours. (I never do that because I don’t have time, by the way, but you can.)&lt;br /&gt;&lt;br /&gt;Sauce - While the chicken is marinading, place the tomatoes into a large saucepan and cook them gently with no added water for about 20 minutes, until they are tender. Rub them through a fine strainer into a clean saucepan. Simmer the tomato pulp on medium heat for about 50 minutes, stirring occasionally until it is thick and reduced. Stir in the butter, stir often, and let it cook for a further 30 minutes. Stir in the cream and heat it through. Taste and adjust the amount of salt if necessary. Put aside.&lt;br /&gt;&lt;br /&gt;Heat oil in a large pan, pour chicken into pan and cook on high heat. Add the tomato sauce to the pan and cook until chicken is cooked through. Serve with a swirl of cream and cilantro sprig to garnish. You can serve it with rice or naan.&lt;br /&gt;&lt;br /&gt;Notes about this recipe--just as the book states perfectly, I tend to spice the food that I cook a lot more than what they recommend and I never use measuring spoons. I add in chilli powder, some red peppers, more cilantro and garam masala…so, have fun with it! :-D Also, I usually double the recipe... I used to do so frequently, before I got married and while I hosted international students. After marrying Minsu, that all changed because honestly Minsu is such a much better Korean cook than I am that I mostly gave it up (he encourages me to cook it more, but I just don't feel I can compare to his outstanding food). Now that he's in med school, he doesn't have time for it either, so occasionally I hope for the best and give it a try!&lt;br /&gt;&lt;br /&gt;This is Kimchi Chigae (Stew). It is SUPER easy to make (like most Korean food) but the trick is in the seasoning. Ingredients are kimchi, water, tuna (in oil), onion, and Korean spices (basically a little beef bullion, a dash of sesame oil, and a dash of soy sauce. You can add a half tsp of gochujang (red pepper paste) to make it even better. It has a spicy, sour taste. However, it's not nearly as spicy as raw kimchi - the secret is to cook it to get rid of some of the spiciness. YUM. Of course, it is served with a side of rice.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Next, I made kim-bap (literally: seaweed-rice). It's like Korean sushi, but it's all cooked - no raw stuff! :o) In my opinion, it is much more flavorful than Japanese sushi. It is one of the more challenging recipes because of the time spent slicing, cooking, and rolling.&lt;br /&gt;&lt;br /&gt;I started off with slicing and cooking everything in long strips - turkey sausage, crab sticks, egg, and spinach - and I used store-bought pickled daikon (like a radish but not hot). I added a little sesame oil and salt to the rice and mixed it well (as opposed to Japanese style sushi, which adds a sugar / vinegar mix to the rice). In the background is the kim, or dried seaweed for the wrapper. They sell a special kim for kim-bap, but I didn't have it so I used regular kim. (You will probably need 2 pans for this - and there is enough meat for 2 packages.) &lt;br /&gt;Put the meat mixutre in the rolls and roll it up. &lt;br /&gt;&lt;br /&gt;Bake for however long the crescent roll package says. (I think it was 13 minutes?) &lt;br /&gt;&lt;br /&gt;These are really good!! brautwurst, German purple cabbage, saurkraut and potato salad.  This recipe is a big hit when I serve it.  I've modified the recipe from "The Barefoot Contessa Cookbook" by Ina Garten.&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;1 pound small white boiling potatoes&lt;/div&gt;&lt;div&gt;1 pound small red boiling potatoes (I usually omit the white and use 2 pounds red)&lt;/div&gt;&lt;div&gt;2 Tbsp chicken stock&lt;/div&gt;&lt;div&gt;3 Tbsp white wine vinegar&lt;/div&gt;&lt;div&gt;1 tsp Dijon mustard&lt;/div&gt;&lt;div&gt;2 tsp kosher salt&lt;/div&gt;&lt;div&gt;3/4 tsp ground black pepper&lt;/div&gt;&lt;div&gt;10 Tbsp EVOO&lt;/div&gt;&lt;div&gt;1/4 cup green onions (white and green parts)&lt;/div&gt;&lt;div&gt;2 Tbsp minced fresh dill&lt;/div&gt;&lt;div&gt;2 Tbsp minced flat leaf parsley&lt;/div&gt;&lt;div&gt;2 Tbsp chiffonade of basil leaves&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Note:  I've used dried herbs in the past and the taste is fine, but fresh is better.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Boil potatoes in salted water 20-30 minutes, until they are just cooked through.  Drain in a colander and place a towel over the potatoes to allow them to steam for 10 more minutes.  when they are cool enough to handle, cut them in large bite sized pieces.  Toss gently with the chicken stock.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Meanwhile, combine the vinegar, mustard, salt and pepper, EVOO, onions and herbs.  Whisk together.&lt;/div&gt;&lt;div&gt;&lt;br easy'/><title type='text'>Lemon chicken with veggies</title><content type='html'>This is an easy, go-to, Thursday night meal at our house.  I've modified it from the book "mom-a-licious" by Domenica Catelli (a pretty good one).  You don't have to add an additional side dish. I think there are also a lot of variations on this, so you may have already known about this one - &lt;br /&gt;&lt;br /&gt;boneless skinless chicken breasts&lt;br /&gt;2 cans cream of chicken soup&lt;br /&gt;1 16 oz sour cream&lt;br /&gt;poppyseeds (I never measure, just shake them in)&lt;br /&gt;1 sleeve of Ritz crackers&lt;br /&gt;1 stick of butter&lt;br /&gt;&lt;br /&gt;1. Boil the chicken. &lt;br /&gt;2. Shred it into smaller pieces.&lt;br /&gt;3. Mix chicken with the cream of chicken soups and sour cream.&lt;br /&gt;4.  Melt the butter and drizzle butter over the top.&lt;br /&gt;5. Crumble up the ritz crackers and put on top. &lt;br /&gt;&lt;br /&gt;Bake at 350 for 30 minutes (although I did 30 mins last night, I'm thinking it could have stayed in a little longer too.) &lt;br /&gt;&lt;br /&gt;We had this last night and the best part is   - leftovers for tonight!&lt;br /&gt;&lt;br /&gt;so, have you heard about this one? Heat a lightly greased 6 in skillet.  Spoon in 2 tbsp of the batter; lift and tilt skillet to spread batter.  Return to heat until lightly brown.  Some people only cook one side.  I like both done.  It is up to you!&lt;br /&gt;&lt;br /&gt;Makes 18 crepes&lt;br /&gt;&lt;br /&gt;NOTES:  This is a really versatile recipe that we just love.  Whenever we went to people’s houses for dinner in France, this was frequently the dessert.  It is great with ice cream, puddings, fruits, peanut butter, or fudge.
